WINE MAKING

Hand harvest of old vines in crates at the beginning of October. Sulfited at the reception, yeast inoculation while filling the tank and management of extractions through daily cap submersion. Winemaking in new french oak barrels, for a part, and in 6 months second-hand barrels. Ageing in barrels 18 months.
